Ok everyone,

back to recipies...

I am bound and determined to figure out how to eat everything that I want and not gain an ounce (maybe the way to do that is to stay away from a scale LOL) without having an eating disorder...

Cadet, no need to discuss exercising again...

I know it's necessary but I just haven't been able to convince myself to do it yet...sigh...

These crazy pears...

a can of whole cranberry sauce (not jellied)
1/4 cup or so of sugar
dash of lemon juice
two cans pear slices (drained)
a can of mandarin oranges (drained)
1/4 tsp ginger
1/4 tsp cinnamon

mix together cranberry, spices, lemon juice, and sugar...

bring to a boil.

Add pears and oranges and simmer for about 10 minutes.

Unreal...

oh wow... i'm drooling... grin

I can see how the above recipe could be converted to a crisp... and instead of the canned cranberries, using whole (fresh or frozen) cranberries... mmmmmmmmm..... cool

Quick and easy ?



Melt a 1/4 stick of butter in a pan, throw in 2-3 diced chicken breast ( or a pound of shrimp )

Salt, pepper , and 1 TBS of Jamaican Jerk seasoning

Saute' until cooked

Add about 1-1/2 cups of frozen-diced Mango

Pour in 1/2 cup of citrus juice ( pineapple works best )

Pour in 1/2 cup of Honey

Season again (to taste) with Jerk seasoning

Cook until Mango is cooked and sauce thickens slightly..

Serve over Jasmine rice

I love fresh cranberries, but most people don't...

The recipie actually called for fresh pears, but I was short on time.

The canned ones worked just fine.

Of course, I am really picky and try to use stuff that has no preservatives in it if it can't be fresh...

Gonna try a cranberry cheesecake and a baked cranberry pudding this season too I think.

Anyway...

Stealin that chicken recipie Mach...

Could also add pineapple chunks to it too...

Tonight is homemade artichoke and mushroom calzones, for me anyway, the others are having pepperoni and either sausage or more pepperoni.

Had artichokes on a pizza a few months back and was pleasantly surprised...

Ok so I dropped by to see what was going on in this thread and I just see talk about recipes? Well any of you who are connected to me on the alt, I'm in an Iron Chef group and I'm all about cooking...check out my many photo albums...it's all pics of cats, yard, and food ;-) I used to make fun of my dad for posting pics of roasts and stuff, and now I'm photographing what I make for breakfast, lunch, or dinner.

And I second AJM's comment on "copious amounts of alcohol." That goes with ANYTHING ;-)

lol... I can't recall you on the alt, but I will say that if it has anything to do with copious amounts of bacon, cheese, and alcohol, it's OK by me... smile

Bacon is my favorite food in the entire world. My nickname in my Iron Chef group (which is only just me and a few friends) is Iron Chef Pancetta. You're probably familiar with Epic Mealtime on youtube...funny stuff :-)
